We are now using "Ouaki Pear" for our Japanese chestnut and seasonal fruit tarts.
In this case, two types are served, one fresh and one caramelized.
By using Japanese pears, which have a sweetness and acidity as strong as that of Japanese chestnuts, we have created a superb dish that cannot be found anywhere else.
